Goldenberry “Pot of Gold” Cheesecake Cups
Individual, no-bake treats that look festive and are easy to prep ahead.
Ingredients

8 oz cream cheese, softened
-
½ cup powdered sugar
-
1 tsp vanilla
-
1 cup whipped topping
-
Crushed graham crackers
-
Goldenberry Jam
-
Fresh fruit or gold sprinkles
-
Directions
-
Beat cream cheese, powdered sugar, and vanilla until smooth.

Fold in whipped topping.
-
Layer in cups: graham crumbs → cheesecake → Goldenberry Jam.
-
Repeat layers.
-
Top with fruit or gold sprinkles.

Lucky Leprechaun Spritzer Mocktail
Ingredients
-
1 tbsp Green Gage Plum Jam
-
Juice of ½ lime
-
Sparkling water or lemon-lime soda
-
Fresh mint
-
Ice
Directions
-
Stir jam and lime juice until smooth.
-
Add ice and pour sparkling water.
-
Garnish with mint and lime.
Raw Apple Cake
1 C sugar, 1 C Oil or melted Butter, 3 Eggs,
1 tsp Black Bear Vanilla
2 C flour, 1 tsp Cinnamon ( I like to add a little more),
1 tsp baking soda, 1 tsp Salt
5 C Raw Apples, diced, optional ½ C nuts
Blend the first 4 ingredients together in a mixing bowl.
Add the next 5 ingredients and stir well.
Fold in Apples (and nuts)
Spread batter in a 9x13 pan.
Topping- ½ tsp Cinnamon with ¼ C sugar sprinkled on top
Bake at 350 for 45 minutes
My favorite recipe book is ‘From Amish & Mennonite Kitchens’.
I got it as a wedding gift, 40 yrs ago. I’ve used it so much I've had to replace it several times- it's on Amazon. 😉My daughters would call for recipes while at college so I’ve given a copy to each of them.

Fried Green Tomatoes

3 Firm Green tomatoes
1 egg beaten
2 tbsp milk
1 cup Cracker Crumbs, Tempura or Panko
¼ cup Oil or Shortening
Salt and Pepper to taste

Slice tomatoes ¾ inch thick

Combine egg and milk. Dip each tomato slice in egg mixture and then into crumbs. (I like to add onion and/or garlic powder to crumbs)

Heat oil and fry coated tomato slices. Brown on both sides, turning once.

Season with salt and pepper.
Amish Fruit Cobbler

1 ¼ C of flour
1 ½ tsp baking powder
½ tsp salt
½ C sugar
½ C milk
2 Tbs melted butter
1 ¾ C fruit of choice- berries, peaches, pear or a mix there of
2 C hot water or fruit juice
¾ C sugar to mix with fruit
2 Tbs butter

Mix flour, baking powder, salt and sugar together. Add milk and butter. Stir until smooth

Spread dough evenly in a greased pan. Arrange fruit over top.

Combine hot water or juice with sugar and butter in a saucepan. Bring to a boil. Pour over the fruit in the baking pan.

Bake at 375 for 45-50 minutes. Serve warm.
